Abstract
907,722. Treatment of chocolate; enrobing. SOLLICH, R. Jan. 30, 1959, No. 3334/59. Classes 28 (1) and 129. Chocolate is continuously withdrawn from a tempered supply and all or part is detempered and, with the addition of further untempered chocolate if required, is retempered and returned to the tempered supply. Tempered chocolate 6 is taken via a pipe 6a from the storage receptacle 2 of an enrober 1 and is supplied in excess to articles 7 to be coated on the conveyer 5, the surplus 8 flowing back to receptacle 2. Tempering device 9 comprises heating (detempering) and cooling (tempering) tanks 10, 11 and these are connected with the enrober by pipes as shown. The system including the connecting pipes is provided with hot water jackets. A feeding pump 12 withdraws chocolate b from the chocolate a in receptacle 2 and delivers it through pipe 13 to the tank 10 which is at 36‹ to 40‹ C. Further untempered chocolate c is added to tank 10 from which the chocolate passes to tank 11 where it is tempered and this chocolate d is returned to receptacle 2. Tank 11 has a cold water jacket connected to the mains through a thermostatically controlled valve. The liftable weir plate 16 enables receptacle 2 to be emptied into the heating tank 10. In a modification, a similar enrober and circulation system is used with a different tempering device 109. This device 109 has detempering and retempering tanks 110, 111 connected by a worm device 112. A small reservoir 114 at one end of tank 110 separates some of the chocolate and passes it on to tank 111 without substantial detempering.
