Chocolate is cooled by passage through a cooling chamber 8, the upper wall 7 of which is cooled by air circulated through ducts 2 and 3 and cooling coils 6 by a fan 5, the chocolate being in direct contact with only the ambient air of chamber 8. Wall 7 is formed of copper or other material of high thermal conductivity.
