Abstract

Fat emulsion for parenteral administration of the oil-in-water type with a phospholipid as emulsifier, on whose disperse phase a positive zeta potential of at least +7 mV has been conferred by a content of doubly and/or triply charged metal cations, in particular calcium, magnesium and triply charged iron ion, in physiologically acceptable concentration. This positively charged fat emulsion can be prepared by starting from phospholipids which have a low charge and which in dispersion produce a negative zeta potential not exceeding -20 mV, preferably from virtually uncharged phospholipids, and bringing about the change to the positive zeta potential by adding the doubly and/or triply charged cations before or after the preparation of the emulsion. The fat emulsion is distinguished by stability, especially towards added electrolytes, and can thus advantageously be employed as a basis for complete alimentation systems.
