Abstract

Whole citrus fruit, e.g. oranges, is comminuted, the comminuted fruit is agitated in a quantity of a hot liquid, such as sugar syrup, to effect rapid extraction of the fruit and the resultant dispersion, whilst still hot, is mixed with a substantial volume of a cold or chilled liquid. The process is described with reference to apparatus described and claimed in Specification 866,689. A formulation for orangeade is given.
