Abstract

Glutamic acid seasoning materials are made by cultivating microorganisms of the genera Pseudomonas, Acetobacter, Aerobacter, Serratia, Escherichia, Bacillus, Gluconobacter, Acetogluconobacter, Gluconoacetobacter, Saccharomyces and Aspergillus in media containing a sugar and a nutrient nitrogen compound, e.g. an ammonium salt, ammonia, urea, a nitrate or a nitrite, in excess of the growth requirement of the microorganisms. Nitrogen may constitute 0.5-8% of the weight of the medium. Examples involve growing (i) Aerobacter cloacae and Pseudomonas fluorescens in a molasses- and ammonium sulphate-containing medium; (ii) Aerobacter cloacae or Gluconoacetobacter in a urea-, sucrose, potassium dihydrogen phosphate- and magnesium sulphate-containing medium; (iii) the microorganisms of cheese in a magnesium sulphate-, calcium carbonate- and wort-containing medium; (iv) Aerobacter aerogenes in a glucose-, potassium dihydrogen phosphate,-magnesium sulphate-, and sodium nitrate- or ammonium chloride-containing medium; (v) Pseudomonas fluorescens in a potassium dihydrogen phosphate-, magnesium sulphate-, sodium nitrite- and saccharified starch-containing medium; (vi) Serratia marcescens and Bacillus subtilis in an ammonium chloride-, sodium nitrate-, sucrose-, potassium dihydrogen phosphate- and magnesium sulphate-containing medium.
