Abstract

Foods, e.g. meat, bacon and fish, are smoked by charging the smoke particles electrically in an intense electrostatic field and then allowing the smoke to deposit on the food in a space free from electrical field. The electrostatic field may be produced by a wire in a conduit or between fine wires and wires of large diameter. The food may be carried in racks moving in the direction in which the smoke travels or in the opposite direction. The food may be stationary during deposition, and the food pieces may be spaced more closely nearer the inlet for the smoke.
