Abstract
A milk-based beverage is prepared by adding a mixture of an alcoholic spirit and a sweetening material to milk which has previously been heat-treated; the resultant mixture is then sealed in bottles or other containers and further heat-treated. In an example 0,125 fluid ounces honey are mixed with each 1,0 fluid ounces of 70 per cent proof alcoholic spirit e.g. rum, brandy, whiskey or gin, with stirring or slight heating if necessary. Milk is heated to 165-175 DEG F. for 20 secs., homogenized at a pressure of 2,500-3,000 lbs./sq. in. and subsequently fed at 165 DEG C. to a bottle-filling machine such that 2,5 fluid ounces milk are injected into bottles designed to hold 3,75 fluid ounces of beverage, 1,25 fluid ounces spirit-honey mixture at room temperature is then added, the bottle sealed immediately and finally subjected to a sterilising temperature of 190-212 DEG F. in an exhaust box for 2-10 minutes.
