Abstract
749,965. Meat tenderising. MAZZONI, R. July 1, 1954 [July 13, 1953; Oct. 19, 1953], No. 19268/54. Class 28(2). A meat slice 20 is tenderised by passing it through a pair of longitudinally fluted crushing rollers 15, 16 and then through a pair of slitting rollers 2 and 3. The slitting roller 3 comprises spaced cutting discs 4 interdigitated with milling cutter teeth 5 of the roller 2. The spacing of the roller pairs is adjustable by eccentric bearings. The rollers 2 and 3 are kept clear by spring pressed combs 11 and 12. The meat is forced down a chute 10. The first rollers 15, 16 may be omitted. A spring 18 urges the cutter teeth 5 against the cutting discs 5 to obtain good slitting action.
