Abstract
733,964. Making meat patties &c. CESARE, D. J. Aug. 11, 1953, No. 22078/53. Class 87 (2). A deyice for cutting and forming meat patties has a cylindrical body 10, Fig. 1, with a sharpened lower edge. 11, which houses a crimping die member 26 having a skirt 28 to which is attached die 31 and which is operated by spring-loaded plunger 19. The mound 32 containing meat 15 may be centred with the aid of viewing apertures 51 after which on depressing plunger 19 the patty is cut out, Fig. 2, and the edges crimped, Fig. 3. Patties of square or triangular shape may be produced by a modification of the device comprising a shaft 2, Fig. 5, with a sharpened lower edge 3 having in it the crimping die 5 which may be held in place by latches 20 engaging die walls 6 in one of a series of slots 8. The die may alternatively be held within the shell by friction, Fig. 10 (not shown), or may be permanently fixed within it.
