Abstract
Fatty acid esters having one or more free hydroxyl groups are made by the re-esterification of a triglyceride with a polyhydric alcohol and a saturated free fatty acid at an elevated temperature, preferably between 160 DEG and 180 DEG C. and with the exclusion of atmospheric oxygen. By exclusion of atmospheric oxygen is meant that the reaction is effected under reduced pressure, e.g. at 2-40 mms., and/or in an inert gas atmosphere. An alcoholysis catalyst such as a metallic oxide, e.g. an alkaline earth oxide, is preferably present. A particularly preferred reaction temperature is that of the boiling point of the alcohol. Zinc, aluminium or titanium oxides are specified catalysts. Starting materials preferably have low iodine values. In an example, hydrogenated whale oil is treated at 160-180 DEG C. and at 10 mms. with stearic acid and glycerol in the presence of zinc oxide to give a product which on removal of volatiles by means of a carrier gas, yields a water-in-oil or oil-in-water emulsion. The products may be used to make emulsions in the food-stuff and pharmaceutical industries optionally with additions such as phosphatides, natural animal and vegetable fats, lipoids and hydrocarbons.
