In a self-contained plant for pasteurizing milk by the high temperature-short time process having plate heat-exchange means and comprising heating, regenerating, mains water cooling and chilled water cooling sections, there is located between the heating and regenerating sections a holding unit which is in connection with the discharge opening of the heating section directly and with the treated milk opening of the regenerating section by way of a diversion valve. In the apparatus of the drawings (Figs. 2, 3 and 10), a holder comprising milk conveying pipes 4 in a hot water tank 11 is in the upper part 3 of a support for the sections, the heating section 22 being located on one side of the support and the regenerating, mains water cooling, and chilled water cooling sections 24, 25 and 26 on the other side; the upper part of the support has side walls which form seating surfaces for plates of the heating 'and regenerating sections; the sections 22, 23, 24 and 25, the respective headers therefor, and the casing of the upper part 3 of the support are clamped together by means of a plate clamp 30, a bar 18 extending above the holder, on which bar the sections and headers are suspended by hooks, and a bar 19 extending below the holder; filters 54 for raw milk, a tank 68 for raw milk and a pump 40 therefor are located in the lower part 1 of the support; at the milk outlet of the holder is a diverter valve 44 wherefrom milk passes, if at the correct temperature, to a port in the wall of the regenerating section, or, if of insufficiently high temperature, to the raw milk tank.
