689,210. Sterilizing food in containers. NAAMLOOZE VENNOOTSCHAP TECHNISCH VERKOOPBUREAU MARJA, and DOMENSINO, H. W. M. Oct. 20, 1950 [Nov. 11, 1949], No. 25612/50. Class 49. Apparatus for sterilizing liquid or solid foods, e.g. milk, cream, porridge, soup, lemonade, fruit juices, meat, vegetables, fruit, in bottles or cans comprises a perforated supporting rack for the containers of food, which rack is spaced from a floor plate, a hood adapted to be lowered to .surround and be sealed with respect to the floor plate, and means for supplying steam into the hood. The apparatus preferably has means in addition for introducing cooling air below the rack. With the apparatus of Fig. 1, cages 1 holding containers of food are placed on an openwork rack 2 on a perforated floor plate 3 surrounded by a gutter 4 containing water; a hood 5 is lowered and its lower edge 7 is accommodated in the gutter 4; steam supplied by a conduit 8 is distributed by pipes 9 over the bottom area of the hood; on completion of pasteurization the hood is raised and the containers are allowed to cool, cooling preferably being accelerated by supplying water atomized in a stream of air to nozzles 12 below the rack.
