Abstract
666,635. Making and coating confectionery. MARS, Inc. May 14, 1948 [Aug. 11, 1947], No. 13277/48. Class 28 (i). [Also in Groups V and XXX] A method of manufacturing candy bars comprises the steps of spreading candy dough in the form of a sheet on to a moving conveyer and simultaneously chilling the outer surfaces of the dough sheet to form a crust, then slitting the dough sheet into continuous strips and simultaneously separating alternate strips into upper and lower levels, then slicing the strips on each level into bar lengths, separating the bars lengthwise from each other and then conveying the bars from the two levels to a common level while at the same time separating the bars laterally, all of the steps being synchronized so that the candy can be moved continuously from the spreading of the dough to the disposition of the bars at a common level without interruption. The apparatus for carrying out the method of the invention incorporates the roller sheeting machine described in Specification 651,484, [Group V], for obtaining the candy sheet, the cutting apparatus described in Specification 666,633, [Group V], for cutting the sheet into strips and the strips into bars, and includes also an apparatus for dispensing caramel and nuts on to the candy sheet. The caramel and nuts dispenser is located at station B, Fig. 2, and comprises one or more caramel cooking kettles 476, Fig. 26, which may be tilted to discharge caramel through a cover 468 into a chute 461. A gear pump unit 497, 498, Fig. 29, at the bottom of the chute discharges caramel on to the dough sheet 100 in two streams 549, nuts being dispensed through a central chute 491 between these streams. The walls 528 of the apertures through which the streams of caramel pass are pivoted so that they may be angularly adjusted to vary the thickness of the caramel streams. The nuts are delivered from a hopper 552, Fig. 26, by way of a vibrating pan 554 to the chute 491, Fig. 29. The various mechanisms are driven by synchronized motors so that the rate of working of the whole machine may be varied by a single control without variation of the relative rates of working of the individual units of the apparatus.
