Abstract
A small amount of a phosphatide, e.g. lecithin or cephalin is added to a yeast fermenter before, during or after propagation or to the yeast before or during the pressing stage. A small amount of an emulsifying agent may also be incorporated in the yeast. Emulsifying agents specified include ammonium oleate, ammonium linoleate, glycerol monostearate, glycol dioleate and glycol distearate. The phosphatide decreases the crumbling tendency and, as does the emulsifying agent, lightens the colour.
