Abstract
<PICT:0361457/III/1> A method of determining fat in a fat-containing substance consists in dissolving the fat in a solvent, separating the solution formed from the non-fatty portion and determining the percentage of fat in the solvent by means of a direct-reading hydrometer. A preferred solvent comprises 85 per cent ortho-dichlorbenzene and 15 per cent para-dichlorbenzene, and the solvent may or may not be heated in contact with the material tested. As shown, the hydrometer has a scale 10 which is calibrated in the percentage of fat in the sample (cacao-butter and chocolate respectively are referred to) when a definite weight of the sample is taken with reference to the amount of the solvent employed in the final mixture. Associated with the hydrometer is a thermometer 11 provided with a scale 13 calibrated in the direct temperature correction of the percentage fat in the sample.
