Milk preparations.-An ice cream mixture is made by drying a part of a given quantity of natural whole meal and incorporating the solids. obtained therefrom with the remaining part of the milk, cream, sugar, and/or other flavouring, with or without a stabilizing agent such as gelatine being then added, and the whole intimately mixed together. Or the dry solids of about 40 parts of natural whole milk may be incorporated with about 60 parts of natural whole milk, cream, or butter and sugar and/or other flavouring, with or without a stabilizing agent, being then added and the mass emulsified or homogenized.
