Abstract

The included substance is a natural or synthetic aromatic and/or flavouring material. The inclusion complexes inhibit the volatilization, oxidation and other changes of the complexed material. The aromatics and flavourings in the complex may be well stored. By addition of edible carriers, compositions can be prepared from the complexes which are useful for aromatizing or flavouring of food or foodstuffs, if desired, dosage units can be formed. The complexes may be prepared by reacting beta -cyclodextrin in solution, optionally in the form of unpurified ferment broth or prepared in situ, with the desired aromatic and/or flavouring.
