Abstract

27,854. Thompson, W. P., [Gsell, A.]. Dec. 20. Cream, treating for special purposes.-To adapt a poor cream, containing less than 25 per cent. of fat, for whipping, it is mixed with up to 10 per cent., generally 1 to 3 per cent., of sour cream or an equivalent of sour milk, and the whole is heated for some minutes, preferably to about 90‹ C., to sterilise it, and especially to destroy the acid ferment. The preparation is finally cooled to about 4‹-5‹ C.
