Abstract
3196. Vignier, E. Feb. 9. Brewing; wine; yeast.-In the fermentation of wines or beers, or in making yeast for distillers, must or wort is added in fractions at regular intervals of time to a quantity of yeast. A vat A containing the yeast is supplied periodically with quantities of must or wort from a container C by an automatic siphon apparatus B. Air, drawn through the filtering-chamber D, is heated or cooled in the vessels H or G, and is passed into the vat A through a perforated pipe A'. Air and carbon dioxide escape from the vat through a trap formed by the vessels E<2>, E<3>. The vessel E<3> contains a cap covering the outlet tube and immersed in water or other medium. The container C and cistern B are provided with similar air-traps.
