Abstract

182,241. Darrah, W. A. April 13, 1921. Stationary batch-mixers with rotary stirrers.- A process of mixing dough consists in shearing the dough and trapping within the sheared surfaces bubbles of air or water, the quantity and temperature of the air or water being such that the dough is mixed first at a temperature at which the yeast is inactive and finally at a temperature at which it is active. Apparatus for carrying out the process comprises a drum and a series of hollow beater bars 7 caniÙd by spiders 10 secured to a rotary shaft 8 which is covered with a heatinsulating medium 13. A blower 30 supplies air through a cooler 29 and valve 21 to the shaft 8, from which its passes through passages in the spiders and bars into the drum, the valve being controlled by a thermostat 20 arranged within the drum and having a temperature-indicator 28. Water is supplied to the shaft through a valve 26 and sight feed 27. The shaft and beater-bars are provided with plugs 25 for keeping the air and water separate. The air and water passages from the shaft and bars into the drum may be arranged alternately.
