Abstract

1537173 Fibrous protein materials GENERAL FOODS CORP 17 March 1977 [6 April 1976] 11453/77 Heading C3H A texturized protein material is produced by a method comprising (a) preparing a mixture comprising an edible heat coagulable protein and water, (b) cooling the mixture to freeze the water into elongated ice crystals and to separate the protein into well-defined, wellordered, substantially independent zones; and (c) immersing the resulting frozen mass into an aqueous solution comprising an edible, watersoluble material capable of stabilizing the protein, for a time effective to stabilize the protein. The resulting stabilized material may then be heated to coagulate the protein, optionally after being first dried. Examples are given in which the protein material treated is soybean milk or isolate, peanut protein isolate, egg albumin, fish meat or fresh milk and the aqueous solution in step (c) comprises ethanol. Other stabilizing agents for use in step (c) include organic solvents, e.g. other alcohols, mineral acids, acetic acid and salts of these acids.
