Abstract

1474990 Process for preparing slow-set pectins of high methoxyl content GENERAL FOODS CORP 2 Sept 1974 38322/74 Heading C3U A process for preparing slow-set pectins with low setting temperatures and decreased sensitivity towards alkaline earth metal ions, and having a D.M. of 60-70 and a -CONH 2 group content of 3-6% based on the total number of galacturonide groups comprises contacting pectin having a D.M. of at least 71 at a temperature of less than 50‹ F. with an ammoniacal solution at a concentration and for a time sufficient to demethylate the pectin to a D.M. of 60-70. The process may comprise first treating the pectin with an acidified methylalcohol solution to methylate it to a D.M. of 71 and then separating the pectin, optionally washing with methyl alcohol and then treating with ammoniacal methylalcohol solution.
