Abstract

1321201 Phenylalanines AJINOMOTO CO Inc 21 Oct 1971 [21 Oct 1970 2 Nov 1970 30 Dec 1970] 49067/71 Heading C2C Compound of formula wherein R<SP>1</SP> and R<SP>2</SP> are H or OH, are prepared by reacting (a) a phenol of formula wherein R<SP>1</SP> and R<SP>2</SP> are as defined above, (b) ammonium ions and (c) at least one compound selected from pyruvic acid, oxaloacetic acid, malic acid, fumaric acid, maleic oxime, glyoxylic acid, lactic acid, and salts and esters of said acids, and optionally (d) a reducing or collating agent, in an aqueous solution in the presence of an effective amount of #-tyrosinase until the phenolic amino acid of the foregoing Formula I is produced. The #-tyrosinase can be produced in situ by culturing a microorganism for example one of the following : Escherichia coli ATCC 3655, Aerobacter aerogenes ATCC 7256, Citrobacter freundii ATCC 6750, Citrobacter freundii ATCC 8090, Erwinia herbicola ATCC 21433, Erwinia herbicola ATCC 21434, Psevdwmonas perlurida ATCC 490, Xanthomonas campestris ATCC 7381, Proteus mirabilis ATCC 15290, Salmonella gallinarum ATCC 9148, Paracolobactrum coilforme ATCC 11605 or Alcaligenes faecalis ATCC 8315.
