Abstract
1314761 Foamed edible material ITT INDUSTRIES Inc 6 Jan 1971 [9 Jan 1970] 625/71 Heading A2B A foamed edible product substantially devoid of fats has incorporated therein a foaming agent comprising a mixture of (a) a monofatty acid ester of a polyhydroxy compound and (b) an alkoxylated mono-fatty acid ester of a polyhydroxy compound, said polyhydroxy compounds preferably having less than 12 carbon atoms in the aliphatic chains, and preferably being esterified with fatty mono-acyl compounds having 12-24 carbon atoms in the acyl radical, the ratio of (a) to (b) being preferably 0.5-5 parts by weight of (a) to 1 part by weight of (b). The foaming agent may be incorporated in an aqueous system containing the edible material, or an aqueous foam may be first formed and the edible material incorporated therein. Examples relate to the preparation tion of foamed fruit and vegetable purees, fruit juices, imitation cream, gelatin foods, confectionery and desserts.
