Abstract

1300116 Fermentation of brewers' wort SCOTTISH & NEWCASTLE BREWERIES Ltd and J O HARRIS 19 April 1971 [10 March 1970] 11498/70 Heading C6E A continuous fermentation process comprises feeding unfermented wort to the lower part of a first vessel in which it passes upwardly through a zone containing an essentially stationary homogeneous mass of yeast, removing partially fermented wort containing a small proportion of yeast from the upper part of the first vessel, passing it to an intermediate point in a second vessel, where further fermentation may take place, removing the fermented wort from the upper part of the second vessel, and continuously or intermittently removing settled yeast from the bottom of the second vessel, the yeast employed being non-head-forming and being such as to display a deflocculation rate in wort independant of the specific gravity of the wort, but not such as to form an indispensible yeast mass under the fermentation conditions.
