[Also in Division A4] A fryer comprises a smooth walled vessel 12 having a drain 24 in its base, a valve 26 for opening and closing the drain, heater means 36 arranged exteriorly of the vessel and spaced upwardly from the base thereof, and filter means 42. The filter means 42 is removable from the top of the vessel 12 and is disposed between the bottom of the heater and the base of the vessel and comprises an upper perforated protector plate (304), a lower perforated filter plate (300) and an intermediate sheet of filter paper (302) Fig. 14 not shown. The vessel contains a removable basket 38 in which is placed the food to be cooked. The cooking oil is drained from the vessel by supplying gas under pressure thereto. The vessel also comprises a cover 50 hinged at one side to the vessel and having clamping means and catch means to hold it closed, with a seal 52 acting therebetween, whereby on release of the clamping means pressure inside the vessel breaks the seal without fully opening the cover. Pressure build up inside the vessel is limited by a pressure regulator, Fig. 7 not shown, which comprises a stem (78) slidably mounted in the cover to form a passage between the vessel and the surroundings, and defining a valve seat (92) for a weighted ball (94). Arranged about the stem is an O ring seal (89) the stem being biased into a sealing position by a spring (84). The heating means 36 comprises band type devices 114, 116 and 118 each being clamped in position by a band member (240) in operative association with a thermostat (120), Fig. 12 not shown. The vessel 12 is located inside a chamber 14 which carries shields on its front and sides so that emission from the vessel passes out to the rear.
