[Also in Division C6] Hop iso-alpha-acids are produced by a process involving extracting a solution of the resinous constituents of hops in a waterimmiscible solvent (typically, methanol, dichloromethane or toluene) with aqueous alkali having a pH sufficiently high (exemplified by 12À0-12À5) to extract both the hop alpha acids and the beta acids, separating the alpha and beta acids in the alkaline extract by contacting it with a water-immiscible organic solvent, the pH being adjusted to between 9À0 and 11À0 so that the alpha acids remain in the aqueous phase as salts while the beta acids are extracted into the organic phase as free acids, separating the aqueous phase and isomerizing the alpha acids therein to obtain a bittering additive containing hop iso-alpha-acids. The iso-alphaacids may then be extracted with a waterimmiscible organic solvent at pH 2-10 and recovered by evaporation of the organic solvent with the addition of sufficient water to ensure complete removal of the solvent, followed by further concentration under vacuum to yield a product with a defined content of iso-alphaacids. The acids may, if desired, be recovered in the form of their alkali metal salts.
