Abstract
1,253,750. Treating sausage-meat products. ERNST BRENDEL K.G. 23 Dec., 1969 [13 Feb., 1969; 2 Dec., 1969], No. 62978/69. Headings A2B and A2D. Sausage meat products are preserved by sterilising the sausage meat at approximately 120‹C, the meat being subsequently cooled and packaged in synthetic material which has also been sterilised. The synthetic material may be sterilised by exposure to ultra-violet radiation. The sausage meat may be sterilised in an appliance comprising a plurality of heated cylinders arranged in sequence through which the meat is pumped (Fig. 1, not shown). The sterilised meat is then passed to a machine 4 (Fig. 3) in which it is packaged in a foil of synthetic material 8 to form a tube 9 which may be severed to form sausage lengths. The ultra-violet radiation emitters 11 sterilised both sides of the foil. The packaged sterilised sausage meat may be placed in an autoclave and cooked at the sterilization temperature for 30 minutes at a pressure of 2.8 atmospheres.
