An apparatus for making Cheddar and similar cheese comprises a section for producing curds coupled to tanks wherein the curds and whey are separated, a device for cutting the curds and mixing with salt, a conveyer to transport the cut and salted curds to a mixing drum, and means for obtaining measured quantities of curds from the drum.
