Abstract

1,134,189. Pasteurizing eggs. BALLAS EGG PRODUCTS CORP. 3 Dec., 1965 [27 Sept., 1965], No. 51479/65. Heading A2D. Liquid egg products, such as egg white, are preserved by removing a major proportion of the trapped air in the products by vacuum treatment while the products are at a temperature below that at which they coagulate, and then pasteurizing them. Where the products are subjected to preheating prior to pasteurization by heat exchange with the pasteurized products, the vacuum treatment is preferably effected after this pretreatment. Suitable forms of apparatus are illustrated with flow diagrams.
