Abstract

The chill stability and foam adherence properties of beer which is preserved against microbial growth with a heptyl para-hydroxybenzoate or an alkali (e.g. sodium) or alkaline earth metal salt thereof, is improved by adding to and intimately admixing with the beer (1) propylene glycol alginate and (2) a cobalt salt or a composition, designated FS-26W, composed approximately of 70% zinc sulphate heptahydrate, 2.5% calcium di-sodium ethylenediamine tetra-acetic acid, 2.5% glycine and 25% gum arabic (powder); this composition FS-26W may be varied slightly without materially altering its properties. The cobalt salt, which should furnish cobaltous ions in solution, is exemplified by cobaltous chloride, cobaltous nitrate, cobaltous citrate, cobaltous sulphate and cobaltous acetate. It is preferred to add the addition (1) and (2) from a single stock solution directly into the beer stream following the final filtration, and to add the preservative benzoate as a solution in ethanol to the beer stream following the final filtration. Alternatively, all three additions may be made simultaneously from a combined stock solution. The following ranges of proportions for the additives are disclosed, expressed in parts by weight per million parts by volume of the treated beer: 5-20 parts of the benzoate, 20-500 parts of the alginate and 0.1 - 10 parts of the cobalt salt or 40-120 parts of the composition FS-26W. Lager beer treated according to the procedure of the various Examples contained 12 p.p.m. of benzoate, 20 or 40 p.p.m. of the alginate, and either 0.5 or 1.2 p.p.m. of cobalt or 60 or 120 p.p.m. of composition FS-26W.
