Abstract
<PICT:1079517/C6-C7/1> In the production of a potable beer there is maintained a circulating body of yeast-containing fermentation medium on one side of a partition and a moving body of wort on the opposite side of the partition, and the partition is essentially porous to permit the passage of the soluble constituents of the wort and for the soluble products resulting from the fermentation of such constituents by the yeast to pass therethrough, but the pore size is sufficiently small to effectively bar the passage of yeast cells. Although the pore size should preferably be below 3 microns to effect total retention of the yeast, it is stated that pore sizes up to 10 microns, which will effectively retain yeast cells up to 7 microns in size, can in some cases be used. In the simplest procedure Fig. 3 (not shown) hopped wort and a yeast suspension are passed along the opposite sides of a cellulose acetate membrane, or a resin-bonded fibreglass or a sintered plastics filter. According to a further embodiment Fig. 2 (not shown) yeast-containing fermentation medium is circulated externally of a porous tube (38) of 1-3 microns pore size, or several parallel porous tubes, and brewer's wort is circulated within the tube or tubes from a holding vessel (41). Referring to the embodiment depicted in Fig. 1, yeast-containing fermentation medium is circulated from a fermentation vessel 1 to the passage 6 between two cellulose nitrate or cellulose acetate membrane filters 8 of 0.3 micron pore size and back to the fermentation vessel by linked variable rate pumps 4 and 5, while fresh wort from a supply tank 12 is pumped under pressure through the left-hand membrane 8 to be carried upwardly by the yeast-containing fermentation medium and a corresponding amount of fermentation medium is displaced through the right hand membrane into a beer receiver 16 from which a proportion of the liquid may be recycled. Carbon dioxide gas is removed from the fermentation vessel 1 by the vortex separator 20 and is collected in a gas holder 21.
