[Also in Division A4] A method of cooking poultry, game birds, meat or fish, comprises the steps of (1) placing the foodstuff in the raw state within a porous earthenware vessel having a body portion 1 and a separable lid 2 for the body portion, the body portion having a flattened area 3 to serve as a base and an irregularly shaped upper edge 4, the lid having a lower edge 5 shaped to closely conform to the irregular edge 4 of the body portion to close the vessel in just one position of the lid relative to the body portion, there being a small hole 6 formed in the vesel remote from the base to regulate the pressure inside the vessel during use, (2) heating the utensil to a temperature between 150‹C. and 350‹C. so that water vapour is generated within the utensil as the temperature rises, thus combining steaming of the foodstuff with roasting.
