Abstract

In a deep fat frying process, the rate at which a food product is conveyed through the apparatus is adjusted in accordance with the temperature of the fat and the capacity of a fat circulating system so that sufficient fat is entrained in the cooked product for the quantity of fresh fat, added to make up this loss, to prevent thermal decomposition and oxidation products from accumulating in the circulating fat. The fresh fat is preferably added at an hourly rate equal to a third or a quarter of the total volume of circulating fat. Fat circulating system: the flow of fat, produced by pump 140, is controlled by an electrically operated valve responsive to a flowmeter 144 by means of a servomechanism. The fat is returned via pump 140 and flowmeter 144 to a heating tank 137 in which it is heated by direct contact with a heating coil. The heated fat flows through pipe 136 to frying tank 21 and through pipe 139 to filter 141 and pump 140. Fresh fat is supplied from tank 152 through a solenoid operated valve which is controlled by level sensing contacts 156 and 157 in a surge tank 151 (Fig. 3, not shown). Food conveyer arrangements: food containing buckets 46 are pivotally mounted on the ends of spider arms 29 which are rotatable, by means of shaft 32 to convey the buckets through the fat. The buckets 46 are charged as they pass beneath a shoot 109, into which equal portions of potato chips or dough pellets are delivered by rotatable drum 111, having a partitioned metering chamber 121 with a discharge opening 122. After it has been conveyed through the hot fat, an actuating lug on the bucket is displaced by stationary guides 64 to open the bottom gates of the bucket and allow the product to fall into shoot 108. Simultaneously, the bucket is prepared for a fresh charge by opening the lid and applying an air blast from nozzle 91 to detach any matter sticking to the walls. The lid stays open to allow charging, after the actuating lug has been removed from guide 64, and the gates have sprung back to close the bottom of the bucket.
