Abstract

A coffee extract is slowly cooled, preferably at a rate of 0.5-3.5 calories/gram/minute, from its ice point to below its eutectic point to form a non-ordered distribution of dendritic ice crystals, and then freeze-drying the frozen extract. The extract preferably contains 20-70% soluble coffee solids.
