Abstract

Pour apprécier rapidement et quantitativement l'oxydabilité de produits alimentaires contenant de la matière grasse, on provoque l'oxydation du produit par irradiation avec un rayonnement ultra-violet en présence d'oxygène et l'on détermine la quantité d'oxygène absorbée lors de l'oxydation ou la quantité d'au moins un composé libéré par suite de l'oxydation du produit.
