Abstract
The prods. of low lactose content are prepd. by treating the prod. in the presence of beta galactosidase or purified lactase extracted from a strain of kluyveromyces fragilis yeast of the type Saccharomyces fragilis. A process as above for hydrolysing 70-90%, esp. 80%, of the lactose from lactoserum comprises eliminating Na and Ca ions, activating with K ions and operating at 40 degrees C and pH 3-6 for 3-6 hrs. The prods. of the 1st process are milk. Condensed milk, yoghurt, and desserts the lactose content of which has been reduced by 40-90% and replaced by glactose and glucose. The prods. are ued in human and animal feeds and the process avoids the problems of intolerance to lactose. Pigs and poultry are able to eat three times more treated lactoserum.
