Abstract

Nouvelle pectine-estérase, procédé pour sa préparation et procédé pour préparer une pectine déméthoxylée avec cette pectine-estérase. La nouvelle pectine-estérase est obtenue par culture sur un milieu d'une souche de moisissure appartenant aux genres Aspergillus, Penicillium, Fusarium ou Sclerotinia, capable de produire cette nouvelle pectine-estérase. Application de la pectine-estérase à l'obtention d'une pectine déméthoxylée utile comme agent gélifiant, émulsifiant ou épaississant pour la préparation des aliments.
