Abstract

The natural frequency of molecular resonance of the prod. or one of its harmonics, within the range of 1800-13000MHz has first to be established. The prod. is irradiated with electromagnetic energy at or near to the selected frequency and with an intensity >=10 milliwatts per cm2. The radiation is pref. emitted in pulses at a frequency between 1 and 100 kHz. Beef is tenderised with no loss of flavour in about 1 1/2 mins. using radiation of 9300 MHz pulsed at a frequency of 27kHz with a power of 2w/cm2.
