Abstract

Procédé pour la fabrication de produits de pâtisserie, de produits en pâte feuilletée et de produits à base de pâte à cuisson rapide, par laminage dans des laminoirs à cylindres multiples. On réalise un réglage contrôlé et précis de la température en faisant circuler à travers le(s) laminoir(s), des quantités importantes d'une saumure ou d'un polyol à température préalablement ajustée. Application à la fabrication de produits de pâtisserie à teneur élevée en matières grasses, en albumine et en eau.
