Abstract

L'invention a pour objet un procédé de séparation du gluten de blé et de l'amidon de blé, consistant à traiter un melange contenant de l'amidon de blé, de la protéine de blé et de l'eau dans un dispositif hydrocyclones. Le gluten s'agglomère dans les hydrocyclones et est entraîné dans la fraction de tête. La majeure partie de l'amidon est contenue dans une fraction séparée du point de soutirage.
