Abstract

An electrical resistance heater battery heats air whic is fan-circulated in closed circuit via radiators serving an oven for cooking a food product which does not come into contact with air from the closed circuit. The battery comprises resistance heater panels downstream of the fan in a divergent duct of trapezoidal cross-section; the panels are distributed evenly across practically the fulfl width of the duct; they are in staggered relationship but overlap each other in the direction of flow with which all panels are aligned to reduce back pressure resistance. Used for heater battery for food processing ovens, esp. in bread bakeries. High thermal efficiency; no problem of humidity control in oven atmos.; no danger of product contamination, as there is with oil fuel burning heaters.
