Abstract

A display unit on top allows the meat to fall into the interior of the casing (1), onto a flap (18). This pivots down down and the meat drops into the gap between two endless chains (2, 3). These form two opposing loops, running over pulleys (8, 9, 10, 11) and driven from motors (12, 13) at the bottom. The facing lengths (6, 7) of chain are straight and vertical and carry the meat at a predetermined speed between heating elements (14, 15). These elements are enclosed (16), the fat being evacuated at the bottom of the enclosure. Brushes (19, 20) are used to remove fat from the chains and the meat is finally deposited into a tray (21).
