Abstract

Compsn. contains 2-8 pts. wt. Na phosphoalginate, 1-4.5 pts. wt. CaSO4.2H2O, 0.5-3 pts. wt. Na2CO3 and an edible antifoaming agent. The total Na phosphoalginate, CaSO4.2H2O and Na2CO3 is 5-12.5 pts. wt. and Na2CO3: CaSO4.2H2O is 1:2 to 1:4. The compsn. is used with 0.5 cups H2O (and 1.5 cups cold milk) to make a cold milk pudding. The pudding does not contain a lot of air and large quantities of starch are not used.
