EL JUGO SE PONE EN CONTACTO CON UNA ENZIMA SELECCIONADA DEL GRUPO QUE CONSISTE EN INVERTASA Y ALFA-GLUCOSIDASA, PARA CONVERTIR UNA PORCION DE LA SACAROSA CONTENIDA EN DICHO JUGO EN FRUCTOSA Y GLUCOSA, TRAS DE LO CUAL SE REALIZA LA CONCENTRACION DE DICHO JUGO DE FRUTAS. EL JUGO RESULTANTE DEBE TENER UN CONTENIDO DE AGUA COMPRENDIDO ENTRE EL 35 Y EL 55%, AZUCAR EN UNA PROPORCION CON EL AGUA COMPRENDIDA ENTRE 0''8:1 Y 2:1 Y UNA ACTIVIDAD EN AGUA INFERIOR A 0''90.
