Abstract
Un procedimiento mejorado para cocer un material amiláceo, en el que se reduce la cantidad de vapor de agua introducido directamente en el recipiente de cocción utilizando recipientes de pre-calentamiento conectados directamente a recipientes de evaporación brusca para elevar la temperatura de una mezcla de material amiláceo hecha pasar a una zona de pre- calentamiento, incluyendo dicho procedimiento mezclar dicho material amiláceo y agua en un recipiente de mezcla, hacer pasar la mezcla a través de al menos un recipiente de pre- calentamiento y aumentar la temperatura de la mezcla hacia la temperatura de cocción predeterminada final, introducir la mezcla en un aparato de cocción, inyectar vapor de agua a alta presión directamente en dicho aparato de cocción y aumentar la temperatura de la mezcla hasta la temperatura de cocción final deseada mientras se restringe la salida de dicho aparato de cocción y se mantiene la presión en el mismo, comprendiendo la mejora, descargar el material cocidoa través de al menos un recipiente de evaporación brusca directamente conectado sin restricción a dicho al menos un recipiente de pre-calentamiento, evaporar bruscamente dicho material cocido en dicho recipiente de evaporación brusca y hacer descender la temperatura de dicho material cocido hacia la temperatura de la mezcla entrante de material amiláceo y agua que se está introduciendo desde dicho recipiente de mezcla en dicho recipiente de pre-calentamiento, y hacer pasar el vapor de agua generado durante la evaporación brusca directamente a dicho al menos un recipiente de pre-calentamiento en contacto directo con dicha mezcla entrante de material amiláceo y agua para calentar dicha mezcla entrante por encima de su temperatura de gelatinización crítica con solo dicho vapor de agua generado durante la evaporación brusca, y reducir la cantidad de vapor de agua a alta presión requerida para cocer dicho material amiláceo y calentar dicha mezcla entrante.
