Abstract

Procedimiento para la preparación de un extracto proteínico vegetal a partir de un medio acuoso que lo contiene caracterizado porque se separa en forma sólida el extracto proteínico vegetal del medio acuoso después de haber llevado el pH de este último a un valor comprendido en el intervalo definido como sigue con respecto al pH isoeléctrico designado con la sigla "ISO": ISO + 0,5 <= pH <= ISO + 1,2.
