Procedure for the manufacture of milk in the form of powder for infants by processing cow's milk; addition of urea, salts, iron compounds and vitamins; pasteurization and homogenization of the liquid mixture; in any case, evaporation; and drying, preventing heat from harming the albuminoids; procedure characterized by the fact that cow's milk is transformed into whey by precipitation of casein with the help of rennet ferment; that the serum is desalted by adsorption of ions to such an extent that in the final product the ratio (by weight) between lactose and ash portions matters 20: 1 - 30: 1; added to the whey which has been partially desalted and adjusted to a pH value of 6.0-7.0, cow's milk enriched with fat and, where appropriate, further fat, so that in the final product (in the form of powder) the fat content represents 20-30% by weight, preferably 26-27% by weight, the ratio (by weight) between lactose and fat imports 2.0: 1-2.5: 1 and the ratio (by weight) ) between whey lactose and albuminoids matters 7: 1 - 10: 1; and that by appropriate selection of the quantitative whey, selection of the relative amount of skimmed milk in cow's milk enriched with fat and selection of the aggregate amount of urea, the composition is adjusted with respect to the nitrogen compounds in such a way that, in the final product, 30-40% by weight of the casein, 45-60% by weight of the albuminoids and 10-15% by weight of non-albuminoid substances come from the total nitrogen.
