Abstract
Procedimiento para la fabricación de hielo y equipo para llevarlo a cabo.#Es objeto de la invención un proceso para la fabricación de hielo en continuo caracterizado porque comprende: (a) preparar una mezcla de agua potable y al menos un aditivo alimentario, siendo el agua potable sometida a un proceso de pasteurización de manera previa o posterior a la adición del aditivo alimentario; (b) enfriar la mezcla obtenida en la etapa anterior, siendo introducida a continuación en al menos un molde mediante un proceso de dosificación; (c) dicho molde es conducido a continuación al interior de un túnel de congelación, donde la mezcla es enfriada hasta congelar en forma de hielo; (d) finalmente, el hielo obtenido en el túnel de congelación es extraído del molde.
