Abstract

Un procedimiento para la preparación de bebidas a base de leche, acidificadas, el cual comprende el diluir una parte de la composición de base, concentrada, líquida, estable a la conservación, para la preparación de bebidas acidificadas, a base de leche, mediante la dilución con 2 a 7 partes de agua, comprendiendo, la citada composición: a. de aprox. un 2 %, en peso, a aprox. un 10 %, en peso, de proteínas lácteas desnaturalizadas, expresado como componentes lácteos, sólidos, no grasos (SNF); b. de aprox. un 15 %, en peso, a aprox. un 80 %, en peso, expresado en equivalentes de azúcar, de un edulcorante a base de hidratos de carbono y / o que no sea a base de hidratos de carbono; c. de aprox. un 0,35 %, en peso, a aprox. un 1,50 %, en peso, de un estabilizador a base de hidratos de carbono, el cual es un polisacárido, seleccionado de entre el grupo consistente en las gomas, las pectinas y los derivados de las pectinas, los derivados de la celulosa, la carragenina y los derivados de la carragenina, y mezclas de entre los mismos, de tal forma que, la viscosidad de la composición de base, sea la correspondiente a un valor situado entre los 15 y los 250 mPas.s; y d. un agente acidificante, presente en unas cantidades necesarias para conseguir un pH correspondiente a valor comprendido dentro de unos márgenes que van desde aprox. 3,0 hasta aprox. 3,8, de la siguiente composición de base, aconteciendo, dicha dilución, en una máquina dispensadora de bebidas, bajo unas condiciones de dilución controladas, que requieren el uso de una bomba, para bombear la composición de base, a un cierto caudal de flujo, y durante un transcurso de tiempo controlado, y una bomba para bombear el agua, a otro caudal de flujo, y durante un transcurso de tiempo controlado, y mezclando la citada composición de base y agua, con objeto de obtener el deseado factor de relación.
